Boneless and skinless cod loins or other thick white fish fillets, weighing 250g or 9oz
1 medium free range egg
50g/1¾oz of coarse, panko-style dry white breadcrumbs
One tablespoon of heaping plain flour
Two to two and a half tablespoons of sunflower oil Lemon wedges, for pressing salt and freshly ground black pepper

The method for this recipe is super easy and there is no complex steps to follow! Step 1
Pat the fish dry with kitchen paper, then cut each piece into 2–3 fingers depending on its shape. Each finger needs to be around 2cm/¾in thick.
Step 2
The batter is made by breaking the egg into a medium basin and whisking it well. Spread the breadcrumbs on a platter for supper. After dusting a second dish with flour, add a little of salt and pepper. Arrange the bowl and plates in a row, following the order of flour, egg, and breadcrumbs. Position a little baking paper-lined tray or board at the end of the queue.
Step 3
Coat one of the fish pieces on both sides by dipping it into the beaten egg after lightly dusting it with the seasoned flour. Place in the breadcrumbs right away, being sure to cover both sides well. Continue coating the other fish pieces in the same manner after placing the covered fish finger on the lined tray.
Step 4
Put the crisper plate (grill pan/tray) in the air fryer’s drawer (basket) and warm it for three minutes at 200 degrees Celsius.

Apply a small amount of oil using a brush. On the crisper plate, arrange the fish pieces so that air can circulate between them.
Step 6
Dab the crumbed surface gently with half the oil using a pastry brush, taking care not to lift the crumbs. Cook at 190C for 4 minutes.
Step 7
Gently flip the fish pieces over and lightly coat them with more oil. Put the fish back in the air fryer and cook for 4 minutes, or until it is cooked through and the crumbs are golden and crunchy. If necessary, you may always go back to the air fryer and cook for a little while longer. Serve with slices of lemon for squeezing.
