This recipe only requires a short list of budget ingredients, takes less than an hour to create, can be served with pasta, rice, noodles, and this recipe creates 4 servings!

Here is the list of ingredients that you need in order to make this amazing air fryer recipe- all budget, healthy, easy ingredients!
Ingredients for the meatballs!
80 grams/ 2¾oz of breadcrumbs
2 tbsp of milk
1 medium free range egg
500grams/ 1lb 2oz of beef mince
2 tbsp of finely chopped fresh parsley
2 tbsp of finely chopped fresh basil
100grams/ 3½oz of feta
For the sauce
2 garlic cloves, peeled and cut in half
400grams /14oz of cherry tomatoes, cut in half lengthways
1 medium shallot, finely chopped of (approx. 50g/1¾oz)
1 tbsp of olive oil
1 tbsp of balsamic vinegar
salt and freshly ground black pepper
To serve
400 grams /14oz dried spaghetti
2 tbsp of butter
1 tbsp of roughly chopped fresh parsley
1 tbsp of roughly chopped fresh basil
50g/1¾oz feta, crumbled
Air fryer meatballs- method!
Step 1
First thing is first we are going to start off with making our meatballs. Weigh out the breadcrumbs and measure out the milk, and crack your egg. Mix it all together in a bowl. Add in the beef, the parsley, the basil and then crumble in the feta. Season with salt and pepper and mix is all using a wooden spoon.
Step 2
Stick your hand in the mix- yes, this may feel weird but it is worth it for the finished result! (wash your hands before and after touching the raw meat). Take a hand full, and roll it into a ball. Repeat this until you have 16. Preheat the air fryer to 200C. Pull out the basket and line with an air fryer paper tray, or use baking paper to form a low-sided base.
Step 3
To make the sauce, place the garlic, cherry tomatoes and shallots on the lined tray. Season with salt and pepper, then drizzle with the olive oil and balsamic vinegar. Air fry this for around 20 minutes, however after 10 minutes has passed, shake the veg half way through.
Step 4
Once cooked, transfer the veggies with care into a big bowl, throw away the paper, and mix until smooth using a stick blender or use a food processor to mix instead. Keep the sauce warm in a small pan over low heat by transferring it there; keep the air fryer running.
Step 5
The meatballs should be cooked through after 10 to 12 minutes of cooking, so place them in the air fryer with equal spacing between them. Meanwhile, cook the spaghetti according to packet instructions. Drain and stir through the butter.
To serve, pile the spaghetti onto a plate and top with the meatballs and sauce. Garnish with a sprinkle of remaining chopped parsley, basil and a little crumbled feta.
