Four tablespoons of olive oil
500g/1lb Two ounces of beef mince
One medium red onion, diced finely
Two freshly chopped garlic cloves and two neatly chopped celery sticks
One medium carrot, peeled and cut finely
Dried mixed herbs, 1 tablespoon
400g of chopped tomatoes in a tin
freshly ground black pepper and salt
For the white sauce;
4½oz (125g) of mascarpone
150g/5½oz shredded strong cheddar; 50ml/2fl oz whole milk; 250g/9oz ricotta
Ingredients to serve and garnish;
9 dried lasagne sheets
10g/⅓oz fresh basil leaves, roughly torn, to garnish (optional)
Slow cooker beef lasagne- step by step guide!

Step 1
Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat to prepare the beef sauce. Add the mince and season with salt and pepper. It should be browned all over after 10 minutes of cooking, during which time it should be broken up with a wooden spoon. After taking the mince out of the pan, put it aside.
Step 2
Put the remaining 2 tablespoons of oil back in the pan over medium heat and add the chopped carrot, celery, onion, and garlic. After adding salt and pepper once more, simmer the veggies for ten minutes or more, turning often, until they are shiny and slightly softened.

Add the canned tomatoes and dry herbs to the pan with the mince. Pour cold water into the empty tin until it is a quarter full, then swill it about and tip it into the pan.

Turn off the heat after bringing everything to a simmer, checking the seasoning and adding a bit more salt and pepper if necessary.

In a bowl, mix together the mascarpone, ricotta, milk, and 100g/3½oz of the cheddar to create the white sauce.

To assemble the lasagne, pour one-third of the white sauce into the bottom of your slow cooker, top with 3 lasagne sheets, breaking up as necessary to cover the meat. Spoon over one-third of the meat sauce.
Step 7
Finish with the meat sauce and repeat the layering process with the remaining pasta sheets and sauces. Top with the remaining cheddar cheese.
Step 8
Cook for three hours on high or five hours on low. The pasta sheets should be soft and the lasagne’s middle should be heated by the time it’s done cooking.
Step 9
Just before serving, garnish with the fresh basil, if using.

Avoid the temptation to take off the cover during cooking, since this will let heat escape and lengthen the cooking time.
