Amazing chicken and bean enchiladas. A tasty meal for all of the family. This amazing quick dinner only takes 1 hour all in, including cooking time, the ingredients are all super healthy, filling you full of your 5 a day, these enchiladas have also got the great flavours of tender chicken, red pepper and black beans, wrapped in tortilla, baked in the oven with passata and cheese!

This meal is perfect for a family dinner, a nice meal on a Sunday night to prepare for school and work the next day, a nice quick, lazy to make meal for during the week, nice Saturday night meals with a glass of wine and a funny movie, no matter why your looking for a tasty recipe, I have the answer.

Amazing chicken and bean enchiladas- ingredients!

This recipe takes 10 minutes to prepare, 50 minutes to cook and makes 4 servings.

Here is the list of ingredients that it takes to make this dish full of different flavours-

-1 tbsp rapeseed oil
-2 red onion, sliced
-2 red peppers, deseeded and sliced
-2 garlic cloves, crushed
-2 tsp chipotle paste (add extra if you prefer more heat)
-2 skinless chicken breasts, cut into thin strips
-400g can black beans or kidney beans
-small bunch coriander, chopped
-500ml passata
-1 tsp ketchup or sugar
-6 medium tortillas
-50g mature cheddar, grated
you can add a green salad to serve

Amazing chicken and bean enchiladas- recipe and method!

The method to this recipe is super duper easy, you only need to follow a few simple steps to make it! It tastes amazing, is so quick to prepare so perfect for lazy days, and will fill a hole in your tummy! Super tasty, super quick, and super easy!

Step 1
To start off we are going to preheat our ovens to 200C/180C fan/gas 6. Heat up your oil in a large frying pan over a large heat and once it is sizzling, add in the onions, peppers and half of your garlic. (to test your oil is ready by putting in one piece of chopped onion and seeing bubbles form around it). Cook this for 12 minutes, stirring it now and again every so often, until your veg has went soft.

Step 2
Stir in your chipotle sauce or paste and fry it for 1 more minute and stir, Add the chicken strips, turning them over in the mixture so they cook all the way through, about 5-10 mins. Stir in the beans, the coriander and the 150ml of the passata, then take the pan off the heat and set it on a pot stand. Mix the rest of your passata that you used earlier and the remaining crushed garlic, and add in your tomato sauce.

Step 3
Now it is onto making the wraps! See, this recipe has been super easy and quick, not much effort yet it will still be full of delicious flavour. Pour half the passata sauce into a 22cm square baking dish, then place the enchiladas on top, side by side. 

Step 4
Onto the last but not least step! We are almost done there amazing enchiladas already! Dot over the remaining sauce and sprinkle over the grated cheese, then bake for 25-30 mins until golden brown. you can serve anything up to salad, potato, rice on the side! Your enchiladas are ready!
