This is the perfect recipe for a Monday packed lunch to take to work or school, after a delicious Sunday roast, boxing day after Christmas day, and just the perfect recipe if you have any left over, spare turkey in your freezer and your looking for the perfect excuse to use it!
Coronation turkey sandwich- ingredients!
Here is the ingredients for the filling-
100 grammes or 3½ ounces of crème fraîche:
One tablespoon of mayo: One tablespoon of mayo
Two tablespoons of medium-dark curry powder:
Apricot jam: 1 tablespoon of apricot jam
The amount of lemon juice is one tablespoon.
One tablespoon of freshly chopped coriander, heaped: One tablespoon of fresh coriander, chopped finely
Two clipped and finely sliced spring onions: Two spring onions, cut finely after trimming
Sliced leftover turkey, 200g/7oz: Sliced leftover turkey, 200g/7oz
roasted almonds, 20g/¾oz: 20g/¾oz of roasted almonds
3-tbsp double cream Three tablespoons of freshly ground black pepper, salt, and double cream
For the sandwich-
Two tablespoons of softened or spreadable salted butter: two tablespoons of softened or spreadable salted butter; four big slices of bread: four large slices of bread; two large handfuls of salad greens, such watercress or rocket

Coronation turkey sandwich- method!
The method for this amazing recipe is super quick and easy and has amazing results! It takes less than 30 minutes to prepare, and this exact recipe makes 2 servings, so if you wish for more, just divide all quantities by 2 and add on the extra recipes!
Step 1
Mix the crème fraîche, mayonnaise, curry powder, apricot jam, lemon juice, coriander, and spring onions in a bowl to create the filling. Add salt and pepper for seasoning.
Step 2
Stir in the turkey, almonds and cream. Season with salt and pepper again if preferred.
Step 3
Butter the bread pieces to put the sandwiches together. Cover two pieces of bread with the coronation turkey filling, then garnish with the salad leaves. Top with the remaining slices of bread.
