Millionaires shortbread- easy and quick method!

Step 1
Preheat the oven to 150C/300F/Gas 2. Line a 23cm/9in square cake tin with baking parchment. In a food processor, pulse together the flour and butter cubes until the mixture resembles fine breadcrumbs. (An alternative is to manually massage the butter in.) Once again, pulse until the caster sugar is added.

Step 2
Using the back of a spoon, evenly distribute the mixture after tipping it into the prepared cake tin. Next, use your knuckles to firmly push the shortbread into the tin, packing it very securely. The shortbread should be very lightly golden brown after 30 minutes of baking. Let it cool. Meanwhile, for the topping, heat the butter, condensed milk and golden syrup in a saucepan, stirring occasionally until the butter is melted and the mixture is smooth.

Step 3
With constant stirring, raise the heat and bring the mixture to a boil. The caramel will become golden-brown and thicken. Pour over the cooled shortbread after letting it cool somewhat. Let it cool fully.Melt the chocolate in a bowl set over a pan of simmering water (ensure that the bottom of the bowl does not touch the water), stirring occasionally.

Step 4
Pour the melted chocolate over the caramel and set aside until the chocolate has cooled completely. Cut into squares and serve.
