Sunflower oil, 1 tablespoon
20g or ¾oz of butter
Two big cloves of smashed garlic
One medium lemon, with the zest only finely grated, and enough to serve

Made with one stock cube, this 300ml/10fl oz hot chicken stock
One tablespoon of cornflour
Five tablespoons of double cream
35g/1¼oz Garnish freshly cooked rice or potatoes and veggies with Parmesan, finely grated salt, freshly pounded black pepper, and chopped fresh parsley or thyme before serving.

This delectable meal only takes 30 minutes to prepare total, and it cooks for more than two hours in the slow cooker. The best part is that once it’s in the slow cooker, you don’t have to do anything! You may just wait until you’re ready to eat it and let it cook!
Step 1
Add a sprinkle of dried thyme and black pepper to each chicken breast, smooth-side up.
Step 2
Place the chicken, seasoned side down, in a large nonstick frying pan with oil heated over medium-high heat. Add the remaining dried thyme and more black pepper. The chicken should be well browned after 2 to 3 minutes of cooking on each side. The chicken will get a lot of colour and taste if it is browned. Move to the pot of a slow cooker.
Step 3
Melt the butter in the same frying pan off the heat. Stir well, then put the pan back on low heat to gently soften the paprika, lemon zest, and garlic for a few seconds while swirling continuously to prevent browning. Stir in about half of the stock and bring to a simmer. Carefully pour the remaining liquid into the saucepan with the chicken. Put a cover on it and cook it for three to four hours on high.

In a bowl, combine the cornflour and 1 tablespoon cold water to form a smooth, runny paste. Add the cream and stir until well incorporated.

In order to avoid breaking up the chicken, remove the slow cooker’s cover and whisk in the cornflour mixture and then the Parmesan. Cook, covered, on high for another 10 minutes, or until the sauce has thickened and the Parmesan has melted.

Distribute the chicken breasts among four shallow dishes or plates that have been warmed. Add a little more lemon zest if necessary, stir the sauce, and season with salt and pepper (see tip below). It’s recommended to use 500–600g/1lb 2oz–1lb 5oz chicken thigh fillets instead of breasts because they won’t dry out as much. This recipe also cooks incredibly well on low heat. Cook for 5 to 7 hours on low heat. Add the cream, cornflour, and Parmesan and turn the heat up to high.
Before grating, give the lemon a thorough wash. Since lemons differ, if your sauce doesn’t taste lemony at the end of cooking, you may either add some additional finely grated lemon zest to the sauce or sprinkle lemon zest over the chicken before serving. If at all possible, do not include any white pith and use the grater’s little shredding holes instead of the tiny scratchy ones.
