There is barely any ingredients that are needed in order to make this meal, which makes it even better! Here is the short list of ingredients that you will need to make this meal-
Ingredients;
8 chicken thighs, skin on and bone in
4 tbsp of hoisin sauce
2 tsp of sesame oil
2 tbsp of clear honey
1 ½ tsp of Chinese five-spice powder
thumb sized knob of ginger, grated
2 garlic cloves, grated
a bunch spring onions, chopped
50 grams of cashew nuts, toasted
cooked brown rice, to serve

Method- spicy sticky chicken traybake!
The method to this recipe is super quick and super easy.
Step 1;
First thing is first, pre heat your oven. Heat your oven to 200 C or 180 C fan or gas mark 6. Garb your chicken thighs and arrange them all to fit and be placed in a large roasting tin. Grab a sharp knife and slash each thigh through the thigh 2-5 times, to make sure each piece of chicken is cooked and absorbs the flavour.
Step 2;
We are now going to start to create a sauce, measure out your hoisin, sesame oil, honey, five-spice, ginger, garlic and mix it all in a bowl, and season it with some salt and pepper. Once it is all mixed, slowly pour it over your chicken in the roast tin and make sure all is covered, then grab a pastry brush and brush the remaining sauce over the top of the chicken coating all of it. If you wish to or have time, you can marinate your chicken for 3 hours, or even overnight, but if not it will taste just as perfect!

Step 3;
Your sticky Chinese chicken traybake is almost ready! See how easy this has been so far! Pop your chicken in your pre heated oven and roast it skin side up for around 35 minutes. Make sure you are basting your chicken several times within the 35 minutes over with the left over sauce (pour fat or juices over (meat) during cooking in order to keep it moist.)
Step 4;
Next weigh out your cashew nuts in a bowl and weigh out and chop up your spring onion. Stir the cashew nuts through the chicken traybake and let them sit for 2 minutes. Sprinkle over your spring onion, warm 4 serving plates and return your roasting dish to the oven for 3 to 5 minutes. Pop some brown rice on your warm plate, and serve the dish in the middle of the table. Your sticky Chinese chicken traybake is ready to serve!
