There is a short list of budget, healthy ingredients that lead towards the bursting flavour of these salmon parcels, here are the ingredients!
Ingredients;
2 tbsp low-salt soy sauce
1 tbsp clear honey
1 garlic clove, finely chopped
1 tbsp mirin (optional)
a little sunflower oil
300g long-stem broccoli
4 x 100g salmon fillets
1 small piece of ginger, cut into matchsticks
a little sesame oil (optional)
sliced spring onions, toasted sesame seeds and cooked rice, to serve

The method is also just as quick and short as the list of ingredients is! It is super easy and ends up being super tasty!

Step 1
Grab your soy, honey, garlic and mirin and measure it out, then pop it all into a small bowl, whisk it all together with a fork, add some salt and pepper then sit it to the side. Cut out some squares of foil. Using scissors, cut out 4 squares of foil, each about 30cm square. Brush each piece of foil with a little oil and bring the edges of the foil up a little.

Step 2
Place a couple of broccoli stems on each piece of tin foil, then take one of your salmon fillets and place it on top of the broccoli stems and scatter each one with a pinch of ginger. Spoon over the sauce. Spoon the sauce over each salmon fillet and drizzle with a little sesame oil to enchance the texture of the salmon.

Step 3
Grab the edges of the tin foil and close the parcels, fold the edges of the foil over and seal them, then carefully place your parcels onto a baking tray. Heat your oven to roughly 200C/180C fan/gas 6. Place the tray in the oven and let them cook for around 15 minutes. When gently pressed with a fork, the fish should easily flake apart. Avoid overcooking, as it can dry out the salmon.

Step 4
When removed from the oven, let them stand for a few minutes, if you opened a parcel to test its ready make sure to seal it back up. Serve each parcel on a plate and let each person open it themselves. Serve with spring onions and sesame seeds for scattering over, and some rice on the side, and add a steak knife to the side to allow it to be cut easier.
