Breakfast club sandwich- super quick and tasty!

This breakfast club sandwich is literally, one of the best things I have tasted in my life. It tastes like a full English breakfast in between 3 slices of toast, my mouth is watering just thinking about it! Filled with bacon, sausage, mushroom, hash browns, beans, eggs, and everything you could imagine, there is nothing that you won’t love in this club sandwich!

This sandwich gets better and better with every bite, making you fall in love with it more and more! You will never go back to a normal full English after this, you will always want the club!

Breakfast club sandwich- ingredients

This breakfast club sandwich’s ingredients can be optional, for example if you don’t like mushrooms, feel free to leave them out! Or if you would like a bit of extra bacon, go ahead and add it! There is no set rules or ingredients for this recipe, you can make it however you like your full English’s!

Ingredients:
-3 tbsp of sunflower oil
-4 frozen hash browns
-3 pork sausages
-4 rashers smoked back bacon
-15 grams of butter, plus extra for spreading
-100 grams of chestnut mushrooms, sliced
-2 eggs
-400 grams can of baked beans
-6 slices of white bread
-butter, ketchup and brown sauce, to serve

That is it! So little ingredients, for such a great, flavourful meal. Now we are onto the quick, easy method!

Breakfast club sandwich- quick and easy method!

Step 1
Start off by preheating your oven at about 220C/ gas mark 7, so that it is quite high. Rub 1 tbsp of the oil over a large and shallow roasting tin, place your hash browns along one side of the tin and your sausages on the other half of the roasting tin. Put these in your oven for around 15 minutes, then flip the hash browns, turn your sausages and pop them back in the oven for another 15 minutes. Once your hash browns are a golden brown colour, and your sausages are brown, lift them out.

Step 2
Push everything together to make room in the same tin, then lay the bacon rashers in the space and pop the in back into the oven for 10-15 mins or until the bacon is cooked and the bacon fat is crispy and sizzling. About 10 minutes early, before the bacon is finished, heat 1 tbsp of oil with the butter in a frying pan until sizzling. Scatter the mushrooms in this butter and season them with salt and pepper.

Step 3
Fry these mushrooms over a high heat and stir them occasionally. Keep frying them until they are softened and there is no liquid in the pan, this should take roughly 5-7 minutes and then pour your mushrooms onto a side plate and leave at the side. Wipe out the pan, heat the rest of the oil and fry the eggs however you like them- sunny side up, over easy, over medium, etc.

Step 4
While all of your meats, your hash browns and your breakfast eggs is cooking, pop your baked beans in the microwave, until they are starting to bubble around the outside, however DO NOT let your beans boil. Also slightly toast your bread, but not too much that it will crumble with a bite, and spread butter over one side of 3 of the slices of toast.

Step 5
Now it is time to build our breakfast club sandwich’s. Start off by slitting your sausages down the middle and splitting them in half, and lay three halves on each of two slices of toast. Top your sausages with a few slices of bacon then spoon over the mushrooms and add a little bit of beans sauce, and then top with another slice of toast. Spread over ketchup or brown sauce (or both), then squash the hash browns down a little and top each toast with two hash browns.

Step 6
Top the hash browns with an egg each, then pop your last slice, pop on more tomato sauce, brown sauce, or even a little bit of bean sauce again and press down lightly on each sandwich and serve as they are or cut in half to get a runny yolk oozing out of each sandwich. Serve with your bowl of baked beans on the side.
