This delicious bruschetta recipe with roasted garlic, burrata and basil is one of my all time favourite recipes to make- no matter if it’s as a starter for a big family dinner you are planning, if it is for a tasty lunch on a nice relaxing Saturday afternoon, or as a diner for a nice romantic date night on a Saturday with your other half! No matter if it is a light lunch, a delicious starter for your family dinner or more, this recipe is the meal you have been looking for!
Bruschetta- ingredient list!
This recipe only requires a short list of ingredients , that are all super easy to find and buy! All of the ingredients in this recipe are working towards the huge mouth melting burst of flavour in this delicious bruschetta snack! Here is the list of ingredients that you need for this meal;
Ingredient list of the roast garlic;
Six huge bulbs of garlic:
Extra virgin olive oil, to drizzle:
Sea salt flakes with extra virgin olive oil
Ingredient list for the bruschetta;
Eight thick sourdough bread pieces
For brushing, use extra virgin olive oil:
Four burratas
Four sliced tomatoes to serve
Ingredient list for the bruised basil;
80ml/2¾fl oz extra virgin olive oil: 80ml/2¾fl oz extra virgin olive oil
20g/¾oz fresh basil leaves: 20g/¾oz fresh basil leaves
¼ tsp sea salt flakes

This recipe is so easy and simple, there is only 6 simple steps to follow in order to make this amazing starter! So, what are you waiting for! Let us get cooking!
Step 1
Turn the oven on to 200°C (180°C for fans) or Gas 6. Place each garlic bulb on a piece of kitchen foil to prepare the roast garlic. To enclose, drizzle with oil, season with salt, and wrap.
Step 2
Place on a baking dish and bake until brown and tender, about 40 minutes.
Step 3
After ten minutes of cooling, remove the garlic’s peel. If making in advance, transfer to a sterile glass jar; otherwise, use right away.
Step 4
Heat a grill pan over high heat to prepare the bruschetta. Oil each sourdough slice, then cook in batches on the grill for 1 minute on each side, or until charred and toasted. Put aside.
Step 5
In a bowl, combine the oil, basil, and salt. Using a spoon, muddle the ingredients until the basil is bruised.
Step 6
Place a burrata on top of each sourdough slice after spreading it with the roasted garlic. Serve with the tomato slices and the bruised basil spooned over.

Here is some recipe tips in order to ensure your bruschetta is the best it can possibly be, and to make sure you have no struggles when making this light starter!
The 200g/7oz of roast garlic in this recipe is more than you’ll need for this meal. Keep for up to three days in sterile jars.
Ideally bruschetta should be served when the bread is freshly toasted and warm, and the toppings cold.
