Cheesy chorizo gnocchi- amazing and easy 30 minute recipe!

This amazing cheesy gnocchi with chorizo throughout is about to become your next go to dinner. Cheesy chorizo gnocchi- ingredient list!

Like I said this list of ingredients is very short and very on budget, making it super cheap and easy to make, what more could you want! Here is the short list of ingredients that you need in order to make this amazing dinner;

Ingredients;
1 tbsp of olive oil
1 onion, finely chopped
2 garlic cloves, crushed
120 grams of chorizo, diced
2 x 400 grams of cans chopped tomatoes
1 tsp of caster sugar
600 grams of fresh gnocchi
125 grams of mozzarella ball, cut into chunks
small bunch of basil, torn
green salad, to serve

That is it! I told you such a little amount of ingredients yet the final dish is bursting full of flavour!

Chorizo and mozzarella- method!

Step 1
Heat the oil in a medium pan over a medium heat. Finely chop and fry the onion and then crush the garlic and also fry the garlic for 8-10 mins until soft. Dice up the chorizo and add it into the pan and fry for 5 mins more. 

Step 2
Add in the chopped tomatoes and the sugar then season with salt and pepper. Bring to a simmer, then add the gnocchi and cook for 8 mins, stirring often, until soft. Heat the grill to high.

Step 3
Grab your mozzarella balls and stir in the mozzarella balls and basil through your gnocchi. Grab 6 heat proof or oven proof ramekins or put it all in one heat proof or oven proof dish or casserole dish.

Step 4
Top it by sprinkling over the remaining mozzarella and pop it in the oven for 3 minutes until the sprinkled over cheese has melted. Scatter over the remaining basil and sprinkle over some salt and pepper to add in the extra bit of flavour.

Step 5
Now your gnocchi is ready to serve, you can either serve it in the middle of the table just out the dish with the serving spoon, or plate it up with a nice green salad or it even matches well with one or two slices of garlic bread!
