Chilli beef jacket potatoes- one of my all-time favourite dinners- quick, easy and delicious! It only takes less than 30 minutes to prepare, and will become one of the family favourites! It is the perfect meal to make on a Monday night for the kids after school and after your work! Perfect meal for during the week or even a weekend lunch!

This recipe takes 30 minutes to prepare and then 1 to 2 hours to cook, however you could microwave the jackets to make this the fastest chilli ever, or you could use crusty bread or rice instead! 591 kcal, 36g protein, 59g carbs (including 14g sugars), 21g fat (10g saturated fat), 10g fibre, and 1g sodium are all included in each meal. Healthy, tasty, quick and easy! What more could you want! So, let’s get cooking!

The ingredient list for these amazing baked potatoes is so short, cheap and on budget and healthy! The perfect 3, and not to mention the perfect burst of flavour that comes with them all as well! Therefore this is just the perfect recipe! Here is the list of ingredients that you need in order to make this meal;

Ingredient list
Three dried-out and cleaned baked potatoes
Four teaspoons of rapeseed oil
One and a half teaspoons of ground cumin and coriander
Half a teaspoon crushed cinnamon
A half-tsp of mild chilli powder
300g/10½oz of sirloin or rump steak, sliced into strips 1 cm/½ inch thick after the fat is removed.
One red onion, cut thinly
400g of tin-chopped tomatoes, 1 red pepper with seeds removed, thinly sliced, 2 garlic cloves, finely chopped, ½-1 red chilli, seeds removed, sliced
One tablespoon of coarsely chopped coriander leaves, freshly ground black pepper, and sea salt

Ingredients used for serving;
300g (3½ oz) of sour cream
Mature cheddar, 45g/1½oz- 30g/1oz of grated
sliced jalapenos

That is it! That is the short list of ingredients that are required, now onto the step by step guide on making these delicious chilli beef jacket potatoes!

Chilli beef jacket potatoes- method!

Step 1
Turn the oven on to 200°C (180°C for fans) or Gas 6. Add salt and pepper to the potatoes after rubbing them with two tablespoons of oil. Use a fork to prick them all over. Bake for 45 to 60 minutes, or until the interior is fluffy and the exterior is crisp.

Step 2
Concurrently, combine the spices in a medium-sized basin. Take out and save two tablespoons of the spice mixture. Toss to coat the meat after adding it to the bowl.

Step 3
Bring a big frying pan to a high temperature. When the beef is browned and just done, add the remaining oil and cook it for 30 to 40 seconds on each side. Then, transfer it to a platter and put it aside.

Step 4
Cover the pan with a lid, add the onion and pepper, and cook for 2 to 3 minutes, or until barely softened. After two more minutes of frying with the garlic, chilli, and saved spice mix, add the tomatoes. Bring to a boil, then lower the heat to a simmer, cover, and cook until the sauce is slightly reduced and the meat is cooked, about 4 to 5 minutes.

Step 5
Cook for a further minute, or until the steak is cooked thoroughly, after adding the liquids. Add the coriander after seasoning with salt and pepper.

Step 6
Cut the potatoes in half lengthwise after they are soft, then distribute them among the plates. Add a dollop of sour cream, some shredded cheese, and a couple slices of jalapeño on top after spooning the chilli beef on top.
