The nights are getting darker, but illuminating Christmas lights from peoples gardens are lighting up the street. The windows are getting frostier, but who knows if it’s the cold weather or if it is the canned snow spray in the shape of a snowman. Carol songs are playing on the radio, and it is finally getting to the best time of year- Christmas time.

And what is the best bit about Christmas… the food! Pigs in blankets, a roast dinner, bucks fizz for breakfast, an amazing side of brussels sprouts, all the best things that come in at this time of year! Well, what if I could tell you that these recipes are going to get even better! These top 3 recipes are perfect to make this holiday season the best one yet! Home made pigs and blankets, brussels sprouts with pancetta and an amazing easy bread sauce to top it all off!

All of these recipes are quick and easy to make with a small ingredient list and taste amazing, not to mention they get you right in the Christmas mood, so what more is the to want! Let’s get cooking!

This recipe takes less than 30 minutes to make, ends up tasting amazing and add’s that extra bit of flavour to your Christmas meal that you didn’t know you needed! It makes 6 to 8 servings which is perfect for a starter for your mea or usually classic bread sauce is a British classic perfect with any white meat, but especially Christmas turkey!

Here is the short list of ingredients that you require in order to make this delicious sauce;
One big peeled onion
Six cloves
One bay leaf, six black peppercorns, and 570 millilitres or one pint of full-fat milk
Fresh white breadcrumbs, 110g/4oz
40g (1½ ounces) of butter
freshly ground black pepper and salt

Method:

The method is just as quick and easy as the ingredients are to buy!

Step 1;
Place the whole peeled onion in a pot after pressing all the cloves into it. Add the milk, peppercorns, and bay leaf. After bringing to a boil, turn off the heat. Let it sit for fifteen minutes.

Step 2;
Remove the peppercorns, onion, and bay leaf, or strain the liquid through a strainer and transfer it to a saucepan. If you are creating the bread sauce in advance, go to the tips section. After stirring the breadcrumbs into the milk, set the mixture over low heat for 5 to 10 minutes, or until the breadcrumbs have absorbed all of the liquid and the sauce reaches the appropriate consistency. Stir from time to time.

Step 3;
Add the butter and season with salt and pepper to taste.

That is it! Your bread sauce is all ready!

Christmas recipe 2- homemade pigs in blankets!

This next recipe is one of my ALL TIME favourite Christmas snacks- pigs in blankets. Every year, one of the things I look forward to the most each year is pigs in blankets. I mean, what is not to love about sausages wrapped in bacon! And this year, they will be even better if they are home made!

This recipe is so quick, easy and only requires a few ingredients! They take less than half an hour to prepare, and as I said only require a short list of ingredients! They are one of the best things you will put past your lips this Christmas, so, lets go!

Here is the short list of ingredients that you need in order to make these pigs in blankets!
Eight tiny streaky bacon slices
16 cocktail sticks and chipolata sausages to hold the bacon in place

Method!

Step 1
Preheat the oven to 200C/180C Fan/Gas 6. After placing the bacon on a cutting board, flatten and stretch it with the side of the knife until it is roughly half as long.

Step 2
After cutting each bacon strip in half, wrap each piece around a chipolata and fasten it with cocktail sticks. Place in a roasting tray and roast for 15 minutes until golden-brown and cooked through.

And that is it! The pigs in blankets are ready for your amazing Christmas meal… my mouth is watering at just the thought!

The third and final, last but certainly not least recipe is these amazing brussels sprouts with a twist of pancetta! Again, this recipe is super easy and quick, and it will make your Christmas dinner the best it has ever been! This recipe takes under half an hour to cook, and tastes amazing, what more could you want!

Here is the list of ingredients that you need in order to make these special brussels sprouts!
Four ounces of trimmed and loose-leafed Brussels sprouts (900g/2 lbs)
Two teaspoons of olive oil
Cut 225g/8oz of pancetta into cubes.

Method!

The method is just as quick and easy as the ingredients are!

Step 1
The sprouts are added to a pot of boiling salted water. After 8 to 10 minutes of cooking, or until soft, strain in a colander.

Step 2
Heat a skillet over high heat until it’s hot. After adding the pancetta cubes and olive oil, cook for 5 to 7 minutes, or until the pancetta is golden-brown and crunchy.

Step 3
Stir in the drained sprouts to ensure they are well heated. Serve right away.
