These crispy cookies with fruit and nuts are guaranteed to become a family favourite. They are not just delicious, they are fun, easy and quick to make! All ingredients are on budget, easy to locate, and the recipe only takes 15 minutes to prepare and 15 minutes to cook!

175g of softened butter
85g of golden caster sugar
225g of ordinary flour,
75g of pistachios,
75g of dried cranberries,
and ½ teaspoon of vanilla essence

Pistachio and cranberry cookies- method!
The method is as quick and easy to prepare and cook as the ingredients are to find! It takes 30 minutes overall, as it is 15 minutes to prepare and 15 minutes to cook! They are super easy, super quick and the result is super tasty! Let’s get baking!
Step 1
Using a wooden spoon, combine the butter, sugar, and vanilla essence. To pull the mixture together into a dough, you may need to get your hands dirty at this point.
Step 2
Stir in the flour, then add the pistachios and cranberries. Cut the dough in half, then form each half into a log that is around 5 cm across. Cover with cling film and freeze for up to three months or chill for one hour.
Step 3
Preheat oven to 180°C (fan/gas) or 160°C. 4. Cut the logs into rounds that are 1 cm thick, put them on a baking pan covered with baking paper, and bake them for 12 to 15 minutes. Let cool fully on the tray.

These dough logs, when properly wrapped, can gladly freeze for up to three months, so you can easily put freshly made biscuits in your Christmas hampers without having to prepare it right before the last minute. Just let it thaw overnight in the refrigerator before slicing and cooking it as directed.
