Step 1
As directed on the package, cook the pasta for 10 minutes in a big pot of boiling salted water. Save some of the cooking water after draining the pasta.

Cook the spinach for one or two minutes until it wilts after adding a little more oil to the pan and raising the heat. Place the spinach on a dish covered with kitchen paper, squeeze out any remaining liquid, and cover with additional kitchen paper.

Add the mushrooms to a frying pan with more heated oil, and cook over high heat until they are tender and caramelised. Return the leeks and spinach to the pan after adding the garlic and frying it for a few minutes.

In a large jug, combine the silken tofu and soy sauce with 3 tablespoons of the pasta water that was set aside. Blend the sauce with a stick blender until it’s smooth, then add it to the pan with the mushroom mixture.

Toss everything together after adding the cooked pasta to the pan. Serve after adding salt and pepper to taste.

Compared to conventional pasta, whole wheat pasta has at least twice as much fibre. Additionally, its surface is a little rougher, which makes the sauce stick to it better and gives it a healthier appearance.

Wait until the mushrooms are done cooking before seasoning them. If you add salt too soon, the mushrooms will lose moisture and sweat in the pan instead of caramelising.

You can make a delicious dip using leftover silken tofu that is seasoned with anything strong, like miso, harissa, or lime and garlic. Serve with your favourite wrap or with oven fries.
