It is the perfect dessert for after a Sunday dinner, for a family meal like a Birthday, for a fun activity with your friends, no matter why your looking for the perfect cake recipe- this is the answer!

This super soft fudge cake with a smooth, creamy icing only takes 20 minutes to prepare, and roughly 20 minutes to cook and it creates a cake that has 8 servings! So what are we waiting for? Let’s get started!

Chocolate fudge cake- ingredients!

There is a little list of ingredients that you need to make this meal, but each one counts towards the amazing flavour that is created! Here is the list of ingredients;

150ml sunflower oil, plus extra for the tin
175g self-raising flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 large eggs, lightly beaten
150ml semi-skimmed milk

Here is also the list of ingredients that you need if you chose to make your icing from scratch (I highly recommend making your own icing)
Ingredients;
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

That is it! That short list of ingredient results in a huge, amazing cake! The method is also just as quick and easy to follow!

Chocolate fudge cake- method!

The method to making this cake is super easy and also fun for the full family to get involved!

Step 1
First things first you want to preheat your oven. Heat the oven to 180C/160C fan/gas 4. Oil and grease and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well all throughout.

Step 2
Make a circle well in the centre of the bowl of the ingredients and pop in the golden syrup, the eggs, the sunflower oil and the milk. Grab a hand whisk but preferably an electric whisk, and whisk all of the ingredients together until it is all smooth. Pour the mixture into the two tins and bake for 25 to 30 mins until risen and firm but springy to the touch.

Step 3
Once your sponge is springy and risen, yet firm remove it from the oven and leave it to cool on a cooling rack for 10 minutes. While your sponges are cooling, we can make the icing. Your chocolate fudge cake is almost ready! To make the icing, measure out beat the unsalted butter in a bowl until soft in a small bowl. Measure out your icing sugar and gradually sieve it into the bowl with the butter. Also gradually sieve in the coco powder, then whisk it all together.

Step 4
Pour in some milk until the consistency becomes fluffy and spreadable, however do not add to much milk that it will water it down, and if it does become to watery, then add in some more icing sugar. Once your cakes are cooled and carefully removed from the tin, spread the butter icing on one side of both and sandwich the two pieces of your chocolate fudge cake together. With the remaining icing, cover the sides of the cake and the top.
