This is the perfect comfort meal for after a long day! A little grated cheddar is added at the end to give the top of this delectable twice-baked potato recipe a gorgeous crisp and golden appearance. The potato is filled with bacon, peas, and creamy soft cheese. To cut down on time, baked potatoes are prepared in batches. These potatoes are super easy to make, super quick, super fun and the finishing result is super tasty!

This recipe takes around an hour in total, and creates 4 servings! Each serving provides 622 kcal, 25.7g protein, 56.5g carbohydrate (of which 10.3g sugars), 30.2g fat (of which 15.6g saturates), 10g fiber and 2.01g salt. Comfort baked potatoes- ingredients!

This recipe does not require much ingredients to make, and they are all on budget, therefore this recipe does not take much to make, and they are all slightly healthy, yet delicious! Here is the list of ingredients that you need;

Ingredient list;
Vegetable oil: Two teaspoons of vegetable oil
Cut 4 rashers of bacon into tiny pieces (about 150g/5½oz): Cut four rashers of bacon into tiny pieces (approximately 150g/5½oz).
One onion, cut finely: One onion, chopped finely
Frozen peas weighing 250g/9 ounces:
Four cooled cooked potatoes (according to the recipe tip): Four cooled baked potatoes (according to the recipe advice)
Two hundred grammes and seven ounces of soft cheese with garlic and herbs
75g/2¾oz grated cheese: 75g/2¾oz shredded cheddar, crushed black pepper, and salt

Delicious doubled comfort meal- method!

Step 1
Preheat the oven to 220C/200C Fan/Gas 7.

Step 2
In a small frying pan, heat the oil over medium-high heat. The bacon chunks should begin to crisp after about five minutes of cooking. Cook for an additional five minutes until the onion is tender.

Step 3
In the meantime, place the peas in a bowl that is microwave-proof, cover, and microwave for 3 minutes, or until they are defrosted (you can also cook them for 2 minutes in a small pot of boiling water). Empty completely.

Step 4
To remove the empty skins, cut the chilled potatoes in half and scoop out the insides into a big basin.

Step 5
Mash the potato after scooping it out. Add the soft cheese, peas, and crispy bacon combination. Add salt and pepper to taste and thoroughly combine.

Step 6
Place the potato skins on a baking sheet and spoon the mashed potato mixture over them. Place the cheese on top and bake for 20 to 25 minutes, or until the potatoes are well roasted and the cheese is golden brown.

Recipe tips- comfort potatoes!

Four big potatoes must be prebaked if you choose to cook this dish without following the meal plan. The oven should be preheated to 220C/200C Fan/Gas 7. Thoroughly wash and pat dry the potatoes. Apply a small amount of vegetable oil to the skins after pricking them with a fork. After placing the potatoes on a baking dish, bake them for one to one and a half hours, or until they are cooked through.

We have included peas and onions in this recipe so that it is a complete meal, but you could use cherry tomatoes if you prefer or leave the vegetables out and serve with a salad instead.
