Oil or beef dripping for deep-frying (the traditional method uses beef dripping, which adds a much superior flavour, although veggie or sunflower oil will also work well)

Ingredients for the chips;
Depending on your level of hunger, 6–8 large floury potatoes, such as Desiree, King Edward, or Maris Piper
Fish and chips- step by step guide!

Step 1
Preheat the oil or drip to 120°C/250°F and the oven to 150°C/300°F/Gas 2.
Step 2
Peel the potatoes and chop them into the desired chip size. Rinse well with cold water, then pat dry with a fresh tea towel. After placing the potatoes in the fryer, let them cook slowly for 8 to 10 minutes, or until they are tender but still have a pale colour. Use a small, sharp knife to pierce them to make sure they are done. Remove from the pan and set aside on greaseproof paper to cool somewhat.
Step 3
Increase the heat of the fryer to 180C/350F.
Step 4
To help the batter adhere to the fish, season it and sprinkle it with a little flour.
Step 5
In order to prepare the batter, mix the flour and a pinch of salt together in a large basin. Then, whisk in the lager until the batter is thick, adding a little more beer if necessary. It should coat the back of a wooden spoon and have the consistency of really thick double cream. Drizzle two of the fillets with batter and season with salt.
Step 6
Cook for 8 to 10 minutes, or until golden and crispy, after carefully placing in the hot fat. Take the fillets out of the pan, drain them, and place them on a greaseproof paper-lined baking sheet. Keep them warm in the oven while you cook the other two.
Step 7
Put the chips back in the frying and cook for another two to three minutes, or until golden and crispy, after the fish has finished cooking. Before serving with the fried fish, shake off any extra fat and sprinkle with salt. For a more genuine experience, serve with bread & butter and canned mushy peas if desired!
