Four to five big, floury potatoes
5 tablespoons vegetable oil
Black peppercorns, 1 teaspoon
Sichuan peppercorns, 1 teaspoon
One onion, chopped finely
One finely chopped red pepper and one finely chopped green pepper
Two chopped garlic cloves
One red chilli, cut thinly
½ teaspoon powdered Chinese five-spice
One teaspoon of caster sugar
One teaspoon of sea salt
Half a teaspoon of chilli flakes
Three spring onions, cut thinly

Step 1
Preheat oven to 220°C (fan 200°C) or gas 7. Slice the potatoes into wedges or chunky chips. Pour into a pan, fill with cold water, and heat until boiling. Once bubbles appear, boil gently for five minutes. After gently draining, let it air dry.
Step 2
In the meantime, place a shallow-lipped baking dish on top of the oven and heat 4 tablespoons of oil. After transferring the parboiled chips to a tray, gently coat them in heated oil and fry for 20 to 25 minutes, flipping halfway through, until golden and crisp.
Step 3
Toast the peppercorns for a few minutes in a wok or big frying pan, then move them to a pestle and mortar and smash them while the chips are cooking. Stir-fry the onion, peppers, garlic, and chilli in the pan over medium-high heat for 5 to 8 minutes, or until the garlic and onions are golden brown. Take off the heat and place aside.
Step 4
Combine the ground peppercorns, sugar, salt, chilli flakes, and Chinese five-spice powder. Place the fried chips back over medium heat after adding them to the pan with the vegetables. Toss to mix. Add the spring onions and the salt and pepper combination. Serve immediately with additional sprinkle of sea salt, if desired, after tossing everything together for one to two minutes until evenly coated.
