Easy tomato and lentil salad recipe- summer salad recipe!

This amazing salad recipe has the great, healthy, mixed flavours of lentil and tomato, including onion, mango chutney and so much more! This recipe is so good for summer, when the sun is shining and you fancy a nice refreshing meal in the garden. It only takes 5 minutes to prepare and all recipes are super cheap, meaning this meal is also in budget! Healthy, tasty, quick, easy, cheap, what is not to love about this amazing tomato and lentil salad!

This recipe makes 4 to 6 servings, overall including cooking time half an hour to make, and each serving only contains 190 kcal! So, what are we waiting for, let’s get cooking!

Easy tomato and lentil salad recipe- ingredients!

There are some optional ingredients in this meal so you can take them out if you don’t like them then you do not need to add them! Here is the list of ingredients that make up the excellent flavour!

Ingredients;
250 grams of dried Puy or green lentil, rinsed
juice ½ lime and juice ½ lemon
1 tbsp of white wine or cider vinegar
1 red onion, thinly sliced into rings
2 tbsp of extra-virgin olive oil
1 tsp of ground cumin
1 small garlic clove, crushed
2 tbsp of mango chutney
handful coriander, roughly chopped
250 grams of cherry vine tomato, halved
85 grams of baby spinach, washed and thoroughly dried

Like I said some ingredients are optional, so it is up to you which ones stay and which ones go, however all ingredients add up to the amazing flavour that you will achieve using all of them!

The method is also super easy and quick, like I said you actually only need to set aside 5 minutes for cooking this meal, as the rest is all cooking!

Step 1
First thing is first we are going to cook the lentils. You can either read the back of the packaging for instructions, or if you are unsure of how to cook different styles of lentils, etc, click on this link here and it will tell you the proper way to do it. I recommend boiling them in a pot of water, and once they start to soften, lift them out and place on a piece of kitchen paper to the side for now.

Step 2;
Meanwhile, mix the citrus juices (lemon and lime, try not to miss these out as they bring a huge burst of flavour to your salad), vinegar (also brings lots of flavour to the salad) and a pinch of salt in a salad bowl, then toss in the onion rings after a few mins of sitting with the juices they will soften and turn pink.

Step 3;
In a bowl, grab a whisk and whisk together the measured out oil, the weighed out cumin, the weighed out garlic and your measured out chutney, mix it all through and then pop this in the bowl with your onions after they have turned pink, add in your cooled down lentils, your measured out quantity of tomatoes and spinach. Toss it all through ensuring it is all mixed through and then heavily season your salad with salt and pepper.

Step 4;
Pop the dish in the middle of the table and eat with a crispy pita bread, or a slice of bread and butter, and serve! Your salad is ready to enjoy, perfect for on the side of a family dinner like a BBQ and more, or a quick lunch!
