Loaded fries- Euros party recipes!

These fries are topped with sour cream, pickled onions, jalapenos, and tomatoes, and more! There is nothing not to love about this recipe! It takes 25 minutes to make which is super quick and the method is super easy! You can miss out on some ingredients as well, if you would prefer to miss these out of your fries!

Here is the list of ingredients that you will need to make these loaded fries;
Ingredients-
1 red onion, halved and finely sliced
½ lime, juiced
450 grams of frozen oven fries
2 tsp of Cajun seasoning, plus a pinch
6 pork or chorizo-style sausages
150g mixed grated cheddar and mozzarella cheese
2 tomatoes, finely chopped
150 grams of soured cream
50 grams of pickled jalapeños
small bunch of coriander, leaves picked

Step 1
Slice your onion and combine it with the lime juice and a pinch of salt in a bowl. Set the bowl to rest and slightly pickle at the side for around 15 to 20 minutes. Heat the oven to 200C/180C fan/gas 6. Arrange your fries in a single layer over a large baking tray, sprinkle with the cajun seasoning- the more you add, the spicier it will be, but I recommend a generous amount.

Step 2
Pop your tray in the oven for 10 minutes, shaking the tray half way through to make sure they are all evenly cooked. You will know they are ready when they start to turn golden- but not brown. Meanwhile the fries are cooking, squeeze the sausage meat from the skins into a frying pan, and add the 2 tsp Cajun seasoning. Fry over a medium heat, breaking the meat up with a wooden spoon, until cooked and browned in places.

Step 3
Once your fries and sausage meat are ready, scatter over the sausage meat and the cheese, return your tray to the oven for a further 10 minutes until your chips are brown and the cheese has melted. Top the hot fries with the tomatoes, soured cream, jalapeños, pickled onions and coriander leaves just before serving- these last few ingredients are optional and you can decide how to top your fries!

Again this recipe is super easy with a short list of ingredients needed to make it! Here is the list of ingredients you will need in order to make this meal;

Ingredients;
1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve

For the ranch dip
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Step 1
Preheat your oven to 200C or gas 7 and line a baking tray with parchment paper. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread the cauliflower out on the tray and cook it for around 20-25 minutes- perfect to cook while watching the start of the euros- cook until crisp at the edges.

Step 2
Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Brush it over the crispy cauliflower and pop it back in the oven for another 10 minutes. For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some carrot sticks and salad for dipping.
