It is finally that time of year. The time to make an amazing dip to top our meals. It is finally summer and it is time we start making our barbecues, our picky bits meals and sat out the back with a fruity cocktail and a bowl of crisps on the side, but something feels wrong. Something is missing. You haven’t found the perfect dip recipe for the side. Well- now you have!

These top 3 dip recipes are amazing and will perfect every meal. Starting off strong with an amazing nacho cheese, an amazing roasted garlic and finishing this list off with a smoky Spanish tomato, no matter what one you try, you are going to love it. These recipes are so easy to make, so tasty and also on budget! So, what are we waiting for!

Nacho cheese dip- recipe.

Starting off strong with this amazing nacho cheese! Perfect for dipping your crisps in, or even on a burger! This only takes 15 minutes and requires so little ingredients. Here is the list of ingredients that you need;

Ingredients;
30 grams of unsalted butter
30 grams of plain flour
450 ml of whole milk
150 grams of extra mature cheddar, grated
5 cheese slices
¼ tsp of smoked paprika
pinch of chilli powder (optional)
tortilla chips, to serve

Method;
Step 1
First thing is first weigh out your butter and melt it over a medium heat in a saucepan. Once it starts to foam, stir in the flour to make a roux (a paste, click on the link here to see how to make a roux) Cook for 1-2 mins, then slowly pour in the milk, whisking continuously until you have a smooth sauce. Let this bubble away for 2-4 minutes until it starts to thicken up.

Step 2
Once it is a little thicker, remove it from the heat. Stir in the grated cheese and the cheese slices and let that thicken up a bit. If the cheese does not fully melt, pop it back on the heat only for a minute. Sprinkle in your paprika when the cheese is all melted and there is no lumps, and then season your meal with salt and pepper.

Step 3
Warm the sauce over a low heat until piping hot, then pour into a serving dish and sprinkle over the chilli powder, if using. Serve with tortilla chips for dunking or with your picky bits! Your first summer dip is ready!

Roasted garlic dip- recipe!

The next dip is an outstanding roasted garlic recipe, it is a little more maintenance than the last but trust me it is worth every step! It takes around an hour to make but not fully all cooking! Here is the list of ingredients you will need.

Ingredients;
4 large heads green garlic
about 6 tbsp olive oil
few sprigs fresh thyme
250-300g/9-10oz soft cheese, such as soft goat’s cheese, ricotta or Philadelphia
a little milk if necessary
2 tbsp chopped fresh herbs – mixture of parsley, tarragon and chives is nice
squeeze of lemon juice (optional)
2 large green garlic cloves, thinly sliced

Step 1
Heat the oven to 190C/gas 5/fan 170C. Cut a slice off the top of each head of garlic and place on foil. Spoon over 4 tbsp of the oil, tuck in the thyme and wrap, pop it in the oven to roast until the garlic turns very soft, season with salt and pepper then allow it to cool at the side.

Step 2
Mix the cheese in a glass bowl until it is smooth and then squeeze the roasted garlic out of the skin into the cheese and mash it with the back of a fork. Beat in oil and/or milk to get a good dipping consistency, add in your herbs, your salt and pepper, and if you wish, add in a drop of lemon juice.
