Fried eggs 3 ways- step by step instruction guide!
Step 1
In order to prepare the crispy eggs with chilli oil, heat a small skillet over medium-high heat. Add the crispy chilli oil when it’s heated and top with sesame seeds, if using. Cook until it begins to boil and the seeds toast, about 1 minute.
Step 2
Reduce the heat to medium and crack in the egg. After two minutes of cooking, carefully pour the oil back over the egg with a spoon to bast it.
Step 3
Serve the egg with stir-fried veggies and cooked noodles, or with whatever else you choose.
Step 4
Heat a small frying pan, add the ‘nduja and most of the butter (save some to butter the bread), and cook for 1 minute, or until fragrant and bubbling, to form the ‘nduja butter eggs. Pour in the olive oil.
Step 5
Crack in the egg and cook to your liking, being sure to spoon some of the ‘nduja over the yolk. Butter and toast the bread. Add the pan-fried spring greens on top, followed by the fried egg and the leftover ‘nduja butter. If desired, top with a sprinkling of chives and a honey drizzle. To taste, add salt and freshly ground black pepper.
Step 6
Heat a skillet over low heat to prepare the feta fried egg. Put a ring of feta in the pan with a little olive oil added, allowing room for the egg in the centre. Give it a minute or two to melt and boil over.In the centre of the melted feta, crack the egg. The egg should be cooked for 3 to 5 minutes, or until the edges are crisp, on medium heat. If the egg is not coking quickly enough, you might need to cover the pan with a lid.
Step 7
Meanwhile, prep the tortilla by dry-frying it in a small frying pan for 2–3 minutes, flipping often. After halves the avocado and removing the stone, scoop the flesh directly onto the tortilla and use a fork to mash it up. Add a pinch of lime juice, salt, and freshly ground black pepper to taste.
Step 8
Gently place the egg in the centre of the tortilla. It should have melted feta lumps along the edges and a crispy bottom. Add some chilli flakes and pink pickled onions at the end if desired.
