Strawberry Shortcake – Method
You want to start by washing your hands, tying your hair back and getting an apron. Preheat your oven to 180 degrees C or gas mark 4. Collect all your ingredients for the shortcake.
Weigh out the sugar and margarine put them together in the large bowl, and then cream them together using the back of a wooden spoon. Cream them together until they are light and fluffy.
Then gradually work in the flour until it forms a stiff dough. Once you have formed your dough, allow the dough to chill for a minimum of 20 minutes, at this stage, you could do some clean as you go, or move on to the fruit cream, but in the next stage I will tell you is still the shortcake.
After the 20 minutes is up, roll the dough out on lightly floured tables and using a 6 cm cutter, cut
out 8 biscuits. Line a baking tray and place your biscuit onto the tray, Prick them with a fork and then place them in the oven and bake them for 8-10 minutes until they are golden brown.
Remove the biscuits when they are baked and allow them to cool on a plate or a cooling rack.
For the fruit cream;
select your strawberry, it is up to you how many you would like to use. Keep a few for decoration, but cut them into roughly one cm pieces. Place them to the side for now.
Whisk your whipping cream until it goes stiff but try not to over-whisk it, avoiding it splitting. Fold in the strawberry segments, the strawberry essence and the icing sugar into the whipped cream and then fold it all in together. Cover it and place it into the fridge to chill and become firmer.
After your cream has set, it is time to assemble the biscuits and cream. This part does not take long, maybe 5-10 minutes max!
Get two biscuit bases and place your strawberry cream over one of them. Sandwich the two bases together and then sprinkle with icing sugar. On the top, decorate with piped rosettes of whipped cream and the spare strawberry from earlier. Drizzle strawberry sauce over the top if you would like, but make sure it is a very fine drizzle.
And your Strawberry Shortcake is done and ready to serve! Place them onto a serving plate, and let everyone enjoy them!
