Leek, sausage & fennel pasta- ingredients!
It only takes a few good ingredients to make this amazing meal and have it bursting with flavour! So, here is a list of ingredients that it takes to make this amazing pasta dish!
1 tbsp of olive oil
6 good quality pork sausages
3 leeks that are thinly sliced
400 grams of fusilli
2 garlic cloves that are crushed
1 tsp of fennel seeds
2 tsp of wholegrain mustard
zest 0.5 lemon
grated parmesan used to serve
That is all the ingredients that is needed to make this delicious meal, not too many but enough that it is bursting with great flavour!
Leek, sausage & fennel pasta- method!
This is such an easy recipe to make, with only a few steps that are not complex at all! 5 main steps that will have your pasta ready and delicious within half an hour!
Step 1!
Start off by heating up your oil in a large frying pan, until it is warm enough to add a little sizzle to your ingredients. Once your oil has heat up, squeeze the sausages from their skins into the pan and break up into small pieces. Cook them over a medium to high heat for 8 to10 mins until browned and crispy in places. Remove using a slotted spoon and set aside.
Step 2
First step done already! Nice and Easy! Next step you want to do is boil your water in a kettle. Add in your chopped leaks to the pan and stir them with a wooden spoon for several minutes. Then leave your leaks to cook over a low heat for 10-12 mins until softened and just starting to caramelise. Season them with salt and pepper.
Step 3
Meanwhile your leaks are cooking you just want to fill up a large pan with the boiled water and some salt, and cook the pasta following pack instructions. Make sure your pasta is al dente. Drain the pasta water h reserving 150ml of the cooking water.

Almost done! you are already on step 4 out of 5! So simple and easy! Crush your garlic using a sharp and fennel seeds to the leeks and cook for 2 mins. Stir through the mustard and sausages using a wooden spoon, then pour in 100ml of the pasta water and let it bubble away and boil for roughly 1 min.

Tip in the pasta to your pan, sprinkle over the lemon zest that you weight out and toss everything together, adding a little more pasta water if needed. Divide between 4 separate plates and top with Parmesan and black pepper, and then your leek, sausage & fennel pasta is ready to serve.
