My top breakfast meals, no matter if it is a birthday, you are making your friends breakfast, treating the kids, or just a nice leisurely breakfast to spice up your meals! Between these taco pancakes and a simple beans and toast, these amazing easy recipes will give you the best breakfasts of your life!

There is a few ingredients that goes into this dish to make it bursting with flavour, but not too many that it gets all complicated and confusing! The ingredients you need to make the magic happen is;

- 125g self-raising flour
- 1 tsp baking powder
- 10g golden caster sugar
- 15g butter, melted
- 1 tsp vanilla extract
- 125ml milk
- 3 egg
- ½ tbsp neutral-tasting oil
- 2g chives, finely chopped
- 30g mature cheddar, grated
For the maple butter (optional)
- 60g butter, softened
- 1 tbsp maple syrup
- pinch of ground cinnamon
For the fillings (your choice)
- Scrambled egg
- Streaky bacon
- Jam
- Nutella
- Cream (already whipped or you can make it yourself)
Heat the oven up to 200C/180C fan/gas 6 and arrange the bacon in a single layer on a baking tray. Bake for 12-14 mins until crisp. Meanwhile, combine the flour, baking powder and sugar in a bowl. Whisk the butter and vanilla and milk and egg together in a jug. Make a well in the centre of the dry ingredients and pour in the wet mixture, whisking to combine. Be careful not to over-whisk this it is fine if there are lumps.
Heat a little of the oil in a non-stick pan over a medium heat. Spoon in 2 tbsp batter and spread out into a 12cm circle. Cook for 2-3 mins until the edge is set and golden. Flip and cook for 1-2 mins more until set. Repeat to make four pancakes, keeping finished pancakes warm in a low oven while you cook the next.
Mean while these are in the oven make your toppings, if you want scrambled eggs scramble them in a pan and fry the bacon, or you can whip your cream, or make your butter.
spread your maple butter or normal butter over your pancakes and then cover with your toppings. Fold them to replicate a taco, and then your nice, warm, breakfast pancake tacos are done! Ready to enjoy!
Turbo breakfast beans & cheese on toast
One of my all time favourite comfort foods is beans on toast. My mouth waters thinking about it. It is literally so tasty, especially this special turbo beans on toast. So easy to make, such an amazing breakfast for the kids or for you for a cheeky meal on the weekend!
All the ingredients that you need are:
- 2 tbsp vegetable oil or other oil
- 1 large onion, finely diced
- 4 garlic cloves, finely chopped
- 1 tsp smoked paprika, plus extra for sprinkling
- 1 tsp ground cumin
- chipotle chilli paste, to taste, or use chilli flakes (optional)
- 200g can chopped tomatoes or passata
- 2 x 400g cans beans of your choice (I recommended hinez beans, so good)
- 4-8 slices crusty bread
- 150g grated cheese, I recommend cheddar or mozzarella.
That is all the ingredients you need to make this amazing beans on toast.
The first step to making this awesome beans on toast is heating up a pan with a little bit of oil. chop up your onion and fry it in your heated oil until it begins to go soft. Next you want to add the garlic and spices, the chipotle chilli paste or chilli flakes, if you are using them, and some salt and pepper. Repeatedly fry the mixture for a few minutes until the mixture is fragrant.
Add in your tomato’s and then swirl in the pan using 100ml of water and add this too. Simmer your mixture for around 10 to 15 minutes so that it get’s thick, then use a hand mix, blitz the sauce then taste and season. Pour in your beans and mix well, coating them in all the sauce. Warm through over a medium heat for around five mins until the beans are piping hot, but be careful!
Heat your grill at a high heat or pop your bread in a toaster, toast the slices of bread for around 3 to 5 minutes, top your bread with your bean mix and sprinkle your grated cheese over the top of it, and put it back under the grill until your cheese is melted and bubbling. If you wish to, top it off with a sprinkle of spices and your beans on toast is all ready to serve!
Delicious breakfast poached eggs!
Finishing off with one of my favourite recipes, poached eggs on toast. Poaching an egg may seem like a difficult task but if you know how to do it properly and take your time, it is worth it in the end!
Boil a pot of water, and add in a tea spoon of vinegar, not to much that it makes the egg turn into vinegar flavour, but enough that it keeps the egg bonded together. Also add in a pinch of salt into the water just to add that extra flavour. When the water is boiling, turn down the head until it is just a simmer.
Crack your egg into a bowl making sure you do not burst the yolk, and then take a metal spoon and slowly turn the water in one direction so it is like a whirlpool. Then, slowly drop your egg into the water. Leave it too cook for roughly 3 to 5 minutes, depends how cooked you want your yolk.
Then, using a ladle take the cooked egg out at set it on a piece of paper towel or kitchen roll so the extra water transfers to this.
Place your egg on a bit of toast, or a bagel, even add avocado or cheese sauce- for eggs benedict- and season with salt and pepper, and there you go, enjoy! A perfect poached egg! Super healthy, and a perfect breakfast or lunch- or even brunch- recipe!
