One tablespoon of olive oil
150g of finely diced, rindless, unsmoked, fatty pancetta or guanciale
One bashed garlic clove
200g of fettuccine or spaghetti
Four high quality egg yolks (two are optional)
50g of freshly grated Parmesan cheese and a few drops of optional truffle oil (optional)

Valentines spaghetti carbonara- step by step method!
Step 1
First, reheat your serving plates in the microwave or low oven. In a big shallow pan, slowly heat the oil. For ten minutes, or until all the fat has been rendered off and the meat is brown and crisp, fry the pancetta or guanciale with the garlic. After taking out and discarding the garlic clove, switch off the heat.
Step 2
Cook the pasta in a big pan of salted water until it’s al dente, which is approximately one minute shorter than the package’s recommended cooking time. In the meantime, beat two egg yolks with a pinch of salt in a small basin.
Step 3
Lift the noodles and any dripping water from the water using kitchen tongs and place them in the pancetta pan. Stir it into the rendered fat with a wooden spoon. Add a little ladleful of pasta water and stir it in if the pan appears dry. You’ll be shocked at how much will be absorbed if you continue adding until you notice some pasta water at the bottom of the pan.
Step 4
Add the beaten yolks to the spaghetti and toss forcefully, working fast. Pour a little extra pasta water into the yolk dish to rinse it off as well. Beat again after adding the majority of the parmesan.
Step 5
Add a bit additional water if it starts to scramble or get claggy at any point. Stir the pasta for a few seconds over the lowest heat if you’ve added too much. A silky sauce with the consistency of double cream is what you want. Taste for salt and add a few pinches of ground black pepper for seasoning.
Step 6
After transferring the pasta to the heated serving plates, sprinkle the remaining parmesan cheese on top and, if using, nestle the final two egg yolks on top. Before serving, sprinkle them with salt and pepper and, if you have it, pour over the truffle oil.
