No.1 amazing sausage casserole- slow cooker recipes.

Sausage casserole. It sounds like one of the dinners that everyone dreads- a Sunday dinner. However, it tastes so good, is so easy and lazy to make, so quick to prepare, that it makes me look forward to Sunday dinners where this is on our plates! A perfect meal for a family dinner event, for a nice night in with your other half, a cosy dinner with your friends, and so much more occasions- no matter why your looking for a cosy/ homely meal, this sausage casserole is definitely the answer!

It is super easy to make and it only takes 15 to 20 minutes to prepare, and you can leave it cooking away all day during the day until it is ready! You can serve this delicious meal with potato’s, pasta, or bread, it is all up to you! So, what are we waiting for… let’s get cooking!

Sausage casserole- ingredients!

There is so little ingredients that goes into making this amazing meal but it is still bursting with flavour! Here is our list of ingredients that we will need in order to make todays meal!

2 red onions, finely chopped
1 celery stick, finely chopped
1-2 tbsp rapeseed oil
4 carrots, cut into fat pieces
12 chipolatas, each halved
1 sweet potato, peeled and cut into chunks
400g tin tomatoes
1 tbsp tomato purée or tomato and veg purée
1 thyme sprig
1 rosemary sprig
1 beef stock cube or stock pot

That is is! That is all the ingredients that you need in order to make this delicious sausage casserole! So, let us get cooking!

Sausage casserole method!

Step 1
Start off by preparing your onions and celery on your chopping board and sit them at a plate to the side whist you heat up your onion. Pop your onion and celery carefully into the pan and fry it over a low heat until it begins to soften and cook throughout. Towards the end, briefly fry the carrots and soften them too and then slowly and carefully spoon them into your slow cooker.

Step 2
Brown the sausages all over in the same frying pan and make sure they get a really good colour because they won’t get any browner in the slow cooker. Transfer your sausages to the slow cooker and then add in the sweet potato and tomatoes! Next put a frying pan on a medium heat and add in the puree and also add in 250 ml of boiling water.

Step 3
Swirl everything around to pick up every last bit of flavour, and tip the lot into the slow cooker. Add the herbs, stock cube and some pepper. Do not add in any salt until your casserole is ready and you can taste and season- as the stock cube may be quite salty and you do not want to over power the flavour of your meal by adding too much salt! Cook your casserole on a high heat for roughly around 4 hours and leave it to cook! You can also put it on a lower heat for roughly around 8 hours to cook… it is just up to you with how much time you have etc!

And your sausage casserole is now finished! A perfect dinner to make for after a long day at work as it is ready for you getting home, perfect for a day with a busy schedule, or even when you just feel like being lazy, this casserole is the answer!
