Pancakes. Burgers. Two of everyone’s favourite things. However, what if I told you that I had a recipe that combines these two beautiful meals together. These savoury pancakes with a burger patty, complete with gherkins, cheese, every burger topping that you can imagine will end up being one of your favourite meals after just one mouthful. Amazing for a brunch where you can’t decide between sweet or savoury, perfect for a lazy Sunday morning, perfect for a fun meal for the kids!

These recipes take only 30 minutes to make, with 10 minutes to prep and 20 minutes to cook! This recipe makes 4 amazing pancakes, with a low budget, small list of ingredients, and only 685 kcal per serving! So, what are you waiting for! Let’s get cooking!

It is just a short list of cheap ingredients that you need in order to make these amazing pancake burgers! The short list makes this recipe easy, quick, and cheap, with a delicious result! What more could you want! Here is the short list of ingredients that you need;

Ingredients;
1 egg, separated
75 grams of plain flour
1 tsp of baking powder
1 tbsp of caster sugar
100 ml of milk
1 tbsp of neutral-tasting oil
250 grams 15% fat beef mince
2 slices of American cheese or mild cheddar
30 ml of burger sauce
40 grams of sliced gherkins

Pancake burgers- method!

Step 1
Grab a large bowl and separate the egg yolk and egg white, popping the egg into the large bowl. Beat the egg white to soft peaks using an electric whisk. Mix the egg yolk with the flour, baking powder and sugar in a bowl.

Step 2
Slowly whisk in the measured out milk to form a smooth paste. Gently fold the previously whipped egg whites into the yolk mixture. Heat half the oil in a non stick pan over a medium heat. To test the oil is hot enough, add in a small drop of the mixture and see if it starts to cook. Spoon in a quarter of the mixture and cook for 2 to 3 mins on each side until the edge is set and golden. Repeat to make three more pancakes. Keep warm in a low temperature oven on the bottom shelf to make sure they.

Turn the heat on the pan up to high. Split the mince in two, gently mould into patties and season well with salt and pepper. Pop half of the remaining oil into the pan, then add one of the patties. Cover with a piece of baking parchment and use a second smaller pan or a glass to evenly press the patty down as hard as you can until about the same size as the pancakes, making it into a flat, pancake looking shape.

Step 4
Cook the burger for 2 to 3 minutes then remove the parchment paper and flip the burger. The side that has been cooking should be browned, add a slice of cheese to the browned side, and let it cook away. Cook until your burger patty has been cooked through and the cheese is melted, leave the patty to stay warm in the oven with the pancake while you repeat this step with the other burger.

Step 5
To assemble, spread two pancakes with the burger sauce, top each with a patty, some gherkins and lettuce or any other toppings you would like, maybe bacon, and finally the remaining pancakes.
