Pepper, lemon and basil pasta- no.1 summer pasta recipe!
Are you looking for an exciting new pasta recipe this summer? Well, this pepper, lemon and basil pasta is the answer! It is a super refreshing, zesty, exciting recipe for warm summer nights, perfect for family dinners as ‘picky bits dish’ in the middle of the table, perfect for a summer date night in the sun with your significant other, or even perfect with a glass of wine on a night in with the girls! This pasta recipe is one of my absolute favourites for summer and I can assure you that after just 1 mouthful, it will be yours too. So, what are we waiting for? Let’s get started!
It is super easy to make, low in calories, it provides fibre, vitamin C and iron and counts as two of your 5-a-day, it is also super tasty! There is nothing not to love about this pepper and lemon spaghetti with basil and pine nuts. So, let’s get cooking!
Lemon and pepper spaghetti- ingredients
Here is the list of ingredients that are needed in order to make this delicious pasta recipe! It does not require many ingredients which is another positive and makes this recipe even better!
Ingredients;
1 tbsp rapeseed oil
1 red pepper, deseeded and diced
150g wholemeal spaghetti
2 courgettes (250g), grated
2 garlic cloves, finely grated
1 lemon, zested and juiced
15g basil, finely chopped
25g pine nuts, toasted
2 tbsp finely grated parmesan or vegetarian alternative (optional)
That is it! That is all the ingredients that you need in order to make this delicious pasta, so, now time to start the super easy and super quick method!
Lemon and pepper spaghetti- method!
Step 1;
We are going to start off by heating up our oil. Measure out your oil and pop it into a non-stick frying pan, chop up your pepper and let it cook in the oil for roughly 3 to 5 minutes, until it is soft. Ensure you are stirring the pepper regularly to make sure it is cooked on both sides. Whilst your pepper is cooking away, pop on a large pot on a medium heat, half full of water and lightly salt it.
Step 2;
Once your water is boiling, add in the pasta and cook your pasta on a medium heat with the water simmering for about 10 to 12 minutes until your pasta is tender and al dente. While your pasta is cooking, add in the courgette and garlic to the pepper and cook, stirring very frequently, for 10-15 mins until the courgette is really soft.
Step 3;
Stir in the lemon zest and juice, basil and spaghetti however make sure to reserve some pasta water, and toss it all together, keep adding in little pieces of the pasta water together until all of your pasta is entirely coated. Taste your pasta and see if you need to add in any more lemon juice- if you want your pasta to taste more zesty and tangy, feel free to add more! Also season with salt and pepper as you wish!
Step 4;
Add in your pine nuts- these are optional and not required- and stir through until they are mixed throughout all your pasta. That is your pasta finished! Using a ladle, spoon it into bowls and top it with shredded parmesan cheese if you want that extra hint of flavour, and enjoy!
