Step 1
Measure out and put the prawns, garlic, ginger, egg white, sugar and soy in a food processor or blender and blitz to a paste. Measure out and chop your spring onions and then stir it into the paste. Pop your paste into a bowl, scraping out every last bit, then cover the bowl with clingfilm or tin foil and chill it in the fridge for at least 20 minutes, preferably half an hour if you have time.

Step 2
Meanwhile your paste is chilling, brush one side of each piece of bread with sesame oil. Then, take your paste out of the fridge and spread the prawn mixture on top, taking it right to the edges of the bread. Lightly brush the egg, not whisk it or it will become to airy, and brush the lightly beaten egg carefully over the top and sides and sprinkle liberally with sesame seeds so they stick all over.

Step 3
Measure out 2-3 cm of oil and pop it in a deep frying pan or in a large pot, heat it up until small bubbles start to form but make sure it does not spit. Pop in one piece of bread and cook it going one at a time to make sure you can keep an eye on it. Cook them un-spread side down for 1½ mins, then carefully turn over and cook for 1-2 mins on the prawn side or until the sesame seeds are golden and the prawn paste cooked through.

Step 4
Cut each piece of the toast once it is cooked into 4 separate triangles and plate it up with the rest of your Chinese, and then you are finished! Your prawn and sesame toast is ready to enjoy!
