Step 1
Heat the oven to 200C/180C fan/gas 6, or if using an air fryer, set it to 200C. In a small bowl, mix together all the ingredients for the spiced sauce, combining the flavors until smooth and well-blended. Next, tip the onion quarters, corn, mango, sweet potatoes, and sausages into a large roasting tin, spreading everything out evenly. Pour the prepared spiced sauce over the mixture, ensuring everything is well coated. Give it a good stir to ensure the sauce evenly covers all the ingredients. Season with salt and pepper to taste, adding a little extra heat or herbs if preferred.

Step 2
Once everything is well mixed, place the roasting tin in the oven or air fryer. Roast for around 30–40 minutes, stirring halfway through, until the sausages are golden and cooked through, and the sweet potatoes are tender. The combination of the juicy sausages, sweet caramelized vegetables, and the tangy spiced sauce makes for a truly satisfying meal.

Step 3
Bake for 45-50 minutes, giving it a toss halfway through to ensure even cooking, until the sausages are fully cooked through and golden, and the sweet potato is soft and tender. The combination of crispy sausages and creamy sweet potatoes creates the perfect balance of flavors and textures. If you plan to freeze the dish, make sure to leave it to cool completely first to preserve its quality. Once cooled, it can be frozen for up to one month.

Step 4
When ready to enjoy, defrost thoroughly in the fridge overnight or at room temperature. To reheat, simply place it in the oven at 200C/180C fan/gas 6 for 35-40 minutes, until piping hot. For an extra burst of freshness, serve the dish sprinkled with chopped coriander and a pinch of chili, if you like, adding a vibrant touch and a little heat to your meal.
