Step 1
Apply oil to a bamboo steamer, then line it with greaseproof paper and apply oil to the paper.

Step 2
In a mixing dish, combine all the gyoza ingredients (except from the dumpling wrappers). Add salt and black pepper to taste after stirring until everything is well blended.

Step 3
Pour some cold water into a small basin to assemble the dumplings. Place a heaping spoonful of the prawn filling in the middle of one dumpling wrapper in the palm of your hand. Run your finger along the edge of the wrapper after dipping it in the water.

Step 4
Don’t seal the edges yet; instead, fold the wrapper over the filling. To seal the wrapper, pinch pleats along one side and push against the other side. Continue working around the edge until the filling is completely encased. After the steamer basket has been prepared, place the dumpling inside and continue until you have six.

Step 5
Combine all the ingredients for the dipping sauce and pour them into a small serving dish.

Step 6
Place the bamboo steamer basket over a pan of boiling water, set the lid on, and steam for five minutes to cook the gyoza. Serve right away with the dipping sauce on the side and the sliced spring onion strewn on top.
