Mothers day chocolate orange Belgium waffles!
The first recipe that will shower your mum with love and show her your appreciation this mothers day is chocolate orange waffles. This recipe is super tasty, super quick and super fun to make, with very little ingredients and effort required- because let’s be honest, it is a Sunday morning!
Ingredients for mothers day chocolate orange Belgium waffles!
- 2 eggs
- 200ml milk
- 130g self-raising flour, sieved
- 20g cocoa powder, sieved
- 20g caster sugar
- 60g butter, melted
- 1 tsp orange essence
- 1 large orange, zested
- 25g dark chocolate, roughly chopped, plus extra to serve
Step 1
Heat up a waffle pan whilst you mix together your eggs and you measured out milk into a jug. If you do not have a waffle pan you can use a non-stick griddle pan. Heat the pan, lightly oil it and pour in the mix. Leave undisturbed for a few minutes. When the mix is almost set on top and golden with deep charred lines underneath, turn it over with a wide spatula or cooking tongs.

Step 2
Combine the weighed out flour, measured out cocoa and weighed out sugar in to a large bowl, then gradually and slowly mix in the egg and milk mixture with a whisk until there are no lumps. Slowly pour in the melted butter, still whisking, then add the orange essence, zest and chocolate.
Step 3
Scoop out a big batch of the mixture with a ladle and pour the batter into your waffle iron or griddle pan and let it cook for 5 to 6 minutes and then flip it over and repeat. Do not worry if the waffle looks too dark as it is simply just the cocoa powder that is in your waffle. You can top your waffles with whipped cream, ice cream, orange zest, orange slices, anything your heart desires!
Serve on a nice plate and take it for your mum to enjoy from the comfort of her own bed! Enjoy.
Mothers day lemon drizzle and cream crepe!
This sweet, pancake crepe cake will honestly melt in your mouth, especially with the contrast between the tangy lemon cream that they are paired with.
Lemon drizzle and cream crepe ingredients!
For the pancakes:
-100g plain flour
-2 large eggs
-300ml milk
-1 tbsp butter, melted, plus more for the pan
For the cream filling:
-1 large lemon zested
-250 grams of mascarpone
-250ml double cream
-50 grams of sugar
For the drizzle (optional but recommended):
-115g caster sugar
-2 lemons, juiced
That is it! That is all the ingredients you need to make this amazing mothers day breakfast! it also only takes 15 minutes to prepare, so it is super easy!
Mothers day Lemon drizzle and cream crepe method:
Step 1:
Start off by collecting a large jug, and then measure out your flour milk, collect your eggs, 1 tbsp melted butter and a pinch of salt and add it all into the jug, and whisk it all until it becomes a smooth batter.
If you have the time, leave this batter aside for 30 minutes to rest, but this is not essential so if you do not have enough time, do not stress!
Step 2:
Set a frying pan or crepe pan that has a base measurement of 16cm over a medium heat and, using kitchen paper, carefully wipe it with a little melted butter. When hot, cook each pancake for 1 min on each side until golden and a little springy to the touch. You should end up with around 12.
Step 3:
Next we want to do is make the cream. Start off by whisking together all the ingredients until semi whipped and still spreadable, the more you whisk it the tougher it will be to spread on the pancakes. You can adjust the consistency by whisking more as you go along or loosening the mix by adding a little double cream.
Step 4:
Layer the pancakes with 2-3 tbsp of the filling, spreading it evenly to the edges, alternating between filling and pancake, finishing with a layer of filling. Put in the fridge to set for 1 hr, or leave overnight if you have enough time. Meanwhile, make the drizzle to go on top. Boil together the sugar, lemon juice and 100ml water until the sugar has dissolved and you have a syrup, then set aside to cool down!
Step 5:
For a presentable finish, trim the edges of the chilled crepe cake with a sharp knife so you can see the layers, if you like. Drizzle over the lemon syrup and cut into slices to serve. Then that is you! Another delicious breakfast ready to show your mum your love and appreciation for her!
