Meatballs. One of my favourite recipes. You can serve them with pasta, rice, potatoes, anything you want! They are so diverse and can be paired with anything! Well, these special meatballs are even better with the added twist of lime and tomato! This recipe is so easy, so quick and perfect for nights in after work or school, when you are super busy but are in the mood for a nice, tasty, family meal!
It requires a short list of ingredients and the method to make this amazing recipe is super easy! It creates 4 servings, has only 362 kcal per serving and 25 grams of fat and 10 grams of carbs, which means this recipe is healthy also! Tomato and lime meatballs- ingredient list!
There is a small list of cheap, on budget ingredients which means it does not cost a fortune to make this meal either- another positive! here is the list of ingredients that you need in order to make this meal!

400 grams 15% fat beef mince
20 grams of dill, roughly chopped
½ tsp of bicarbonate of soda
3 tbsp of olive oil
2 shallots, finely chopped
3 garlic cloves, finely chopped
1 green chilli, finely chopped
1 tbsp tomato purée
2 x 400 grams of cans chopped tomatoes
2 tsp ground cardamom, or 12 cardamom pods, opened and crushed
1 lime, zested and juiced
1 tsp sugar, plus a pinch
couscous, rice or flatbreads, to serve
Tomato and lime meatballs- method!
Step 1
Measure out the beef mince and mix it with half the dill, the bicarb as it helps keep the meatballs juicy, and season heavily with a lot of salt and pepper. Grab all the mixture and combine it into roughly 20 meatballs, that weigh about 25 grams each. Pop these in the fridge to chill while you continue the next step!
Step 2
Meanwhile the meatballs are chilling we are going to make the sauce! Heat 2 tbsp of the oil in a large, shallow pan over a medium-low heat and cook the shallots, garlic, chilli and a pinch of salt for 8 to10 mins until the shallots are lightly caramelised.
Step 3
Measure out your tomato puree and add it into the mixture you have created so far, then turn up your cooking heat but only slightly. Cook it for about 2 to 3 minutes until it is darkened. Add the chopped tomatoes, 150ml water, the cardamom, lime zest, sugar and a good pinch of salt. Bring your mix to the boil, then turn the heat down and let your sauce bubble away for roughly 7-10 minutes.
Step 4
heat your grill up to a high heat, tip the meatballs into the sauce and cook the meatballs away for for 8 to 10 mins until they are nearly cooked through. Remove the lid, then put the pan under the grill for 4 to 5 mins until the top has some colour. Remove from the grill and leave to cool slightly. Mix the rest of the dill with the lime juice, remaining 1 tbsp olive oil, a pinch of sugar and some seasoning. Dot this over the meatballs, then serve with couscous, rice, pasta or even flatbreads!
