Brie and cranberry bacon filo bites- Christmas dinner starter 2!

The ideal way to serve these simple brie and cranberry Christmassy canapés is just out of the oven, when the cheese is hot and melted. A 24-hole small muffin tray (or two 12-hole mini muffin tins) is required. This recipe takes 30 minutes to prepare and roughly 30 minutes to cook, this also makes 24 servings! Quick, easy and tasty!

Here is the list of ingredients you need in order to make these amazing pastries;

Ingredient list;
Two 48x25cm/19x10in sheets of filo pastry: Two 48x25cm/19x10in sheets of filo pastry
55g/2oz melted unsalted butter: 55g/2oz melted unsalted butter
The brie weighs 150g/5½oz.
An optional addition is one to two teaspoons of wholegrain mustard.
The amount of cranberry sauce is 100g/3½oz.
75g (2¾ oz) of smoked bacon rashers, cut into strips measuring 1 cm by 1 inch: 75g/2½ oz of smoked bacon rashers, cut into strips measuring 1 cm by 1 inch and freshly ground black pepper

Method;
Step 1;
Preheat the oven to 190C/170C Fan/Gas 5. To prevent the filo pastry from drying out, take one sheet and place a moist tea towel over the remaining pastry. To make working with the pastry simpler, cut it in half. Apply a little amount of the melted butter to one half of the pastry. Cut this half into around 20 squares that are 5 cm by 2 inches. Arrange three of the squares in a star shape by stacking them on top of one another at a little angle to the one beneath.

Step 2;
A tiny muffin tray may be made into an empty pastry case by pushing the stack of pastry squares into one of the holes. Continue using the leftover dough until all 24 holes are filled.

Step 3;
Divide the brie into 24 little pieces, then put one into each pastry casing. Place a couple slices of bacon on top, drizzle with a little cranberry sauce, and, if using, dab with a little mustard.

Step 4;
Bake for 10–12 minutes, or until the bacon is cooked, the cheese melted and the pastry golden-brown. Leave to cool in the tin for a couple of minutes before removing carefully and serving.
