The summer is coming and it is time to plan one of our favourite summer activities of the year- a picnic! These 3 picnic recipes will give you the summer treat you deserve, from amazing ham salad sandwiches to delicious ham and egg bites, all of these amazing recipes will make your summer 10x better! Perfect for a nice girly day out with your friends, a family summer trip, a nice date with your partner, and so much more! Prepare to have one of the best summers of your life with these recipes!

All of these recipes are super easy and also super fun to make, the kids will love helping you with them! So what are we we waiting for, let’s get cooking for our summer picnic!

Ham sandwich- picnic recipe 1!

This ham sandwich recipe is perfect for one of your main bits of your meal! There is so little ingredients, the kids will love it,

Ingredients;
¼ red onion, thinly sliced
1 tbsp salted butter, softened
1 tbsp Dijon mustard
2 tbsp mayonnaise
a squeeze of honey
4 slices seeded farmhouse bread
8 slices wafer thin honey roast ham
40g Cornish Cruncher cheddar (optional)
a handful of watercress, rocket or Iceberg lettuce
1 tomato, thinly sliced

There is so little ingredients, and many of these are optional so you can leave them off if you are not a huge fan of them! So, what are we waiting for! Lets get cooking!

Method;

Step 1
Start off by slicing your onions, and then pop them into some water with ice and leave them to soak for roughly 5 minutes to help tame some heat. Once they have been soaked, remove them from the water and drain them on a piece of kitchen paper. Grab your bread and your butter, and spread it over just one side of the bread.

Step 2
Measure out the Dijon, mayonnaise and honey and mix it in with a pinch of salt and pepper in a small bowl. Spread this sauce on the dry slice of bread, the slice that does not have any butter on it so far. Slice up your tomato and sprinkle the slices with salt.

Step 3
It is time to assemble our sandwich already! See, how easy was that! Layer up the sandwich with the ham, cheese, watercress, the onion and tomato. Lay the remaining slice of bread on top and slice in half, wrap in cling film to hold all of your ingredients in, and now you are ready to go! Your sandwich is ready to be packed away for your picnic ! Enjoy!

Pea & ham picnic eggs- picnic recipe 2!

This next recipe is a little more difficult but trust me it is completely worth it! There again are a few more ingredients but again, it is all to make that burst of flavour! here is the list of ingredients that you need in order to make this amazing meal!

Ingredients;
6 large eggs, at room temperature
90g frozen peas, defrosted and any water drained
90g cooked ham hock, shredded
3 tbsp mayonnaise
650g sausage meat
1 tbsp Dijon mustard
3 tbsp finely chopped parsley
½ tsp dried sage
70g plain flour
130g dried breadcrumbs
1l vegetable oil, for deep-frying

Method;
Step 1
Pop a large pot or pan of water on and bring it to the boil and gently lower in 4 of the eggs with a spoon. Cook for 10 mins, then scoop out and rinse under cold water to stop the cooking process. Peel the shell and chop up the egg that is boiled into small pieces. Tip into a bowl, then gently fold through the peas, ham hock and mayonnaise. Season. The mayonnaise will help bind everything, but don’t overmix, or the egg will start to crumble up. Set these to the side in a bowl for the time being.

Step 2
Mash the sausage meat, mustard, parsley, sage and some seasoning together with your hands until well combined. Split up the mixture into 16 balls that are around the size of a wall nut. Press one of the balls flat in your palm to make a thin disc and then add in a heaped teaspoon of the pea and ham filling to the centre. Close your hand over in order to wrap the sausage meat around your mix and pinch and press them to seal well. Reroll into a neat ball in your hands, then transfer to a plate and chill. Repeat with all the remaining sausage meat balls and filling.

Step 3
Beat your remaining eggs in a shallow bowl then tip the bread crumbs and flour onto two separate plates. Season the flour with salt and pepper. Once your eggs are chilled, dip them into the seasoned flour, then the egg mix and then the bread crumbs, until all of your eggs are coated.

Step 4
Fill a large pan or wok no more than a third full with the oil and heat to 180C, or until a cube of bread sizzles when dropped into the oil and browns in 30 seconds. Slowly lower the picnic eggs into the oil in batches of four or five, and turn every minute for 3 to 4 mins, until evenly golden and crisp all over. Drain on a plate lined with kitchen paper while you cook the remaining batches.

Season with salt and pepper and then your eggs are ready! Another great snack that will make your summer picnics 10 out of 10! Like I said that recipe was a little trickier but trust me they are so tasty and so worth it!
