Are you looking to find some new salad recipes to make for a quick and easy packed lunch for work or school, if you are looking for a tasty and quick recipe for after work when you want something amazing but can’t be bothered cooking. 3 salads full of amazing flavour such as a quick Caesar salad with amazing crunchy home made croutons, a herby lemon and orzo pasta and a crunchy lentil and tuna salad.

All of these recipes are family friendly so perfect to have in a large bowl for sharing at family dinners, a side at BBQ’s, perfect for school lunches and even if you want to get the kids involved in cooking, they are easy enough for the kids to help out with!

Caesar salad with homemade crunchy crotons!

One of my all time favourite recipes, it is so so easy to make, is filled with so much flavour- and would you really believe that home made crotons are super easy to make! This recipe literally takes 5 to 10 minutes to make, and only has 394 kcal! Perfect for a tasty but super healthy lunch!

You only need a short list of cheap ingredients to make this salad which also ensures it is budget friendly! Here is the short list of ingredients that you need in order to make this amazing meal!

Ingredients for the salad;
4 crispy chicken thighs, sliced
2 rashers of bacon
125ml light mayonnaise
1 lemon, juiced
1 tbsp Worcestershire sauce
50 grams of parmesan, grated, plus extra to serve (optional)
1 garlic clove, crushed
1 large Cos lettuce or 4 Little Gem, ripped into pieces

Ingredients for the homemade crotons;
30 to 50ml of Olive oil
Slice of white bread (crusts cut off)
Plenty salt and pepper
Garlic seasoning

That is it! That is all the ingredients that you need to make this delicious salad!

Step 1
Put your croton oil in a bowl and heavily season with salt and pepper and add in your garlic seasoning (there are no specific measurement for this- if you like them a lot more garlicy then add in more, if not a little pinch will do to bring the flavour). Grab your slice of bread and cut the crusts off of them.

Step 2
Cut your slice of bread into squares and pop them to soak in the oil, making sure you scrape up the seasoning and the bread is soaked in the oil coated in seasoning. Once they have sat in the oil for around 5 minutes, then pop it in the air fryer at 200 degrees for 7 minutes until they go extremely brown and crispy.

Step 3
Pop your bacon rasher in the air fryer beside your home made crotons. Slice your chicken, if you have room in your air fryer add them in and if not pop it in the oven that is heated up to 180, until they are fully cooked through and warm.

Step 4
In a large bowl, mix the mayonnaise, lemon juice, Worcestershire sauce, grated parmesan and garlic, then season with salt and pepper. Add 3 or 4 large lettuce leaves into you bowl (you can shred them if you prefer) then pop your crispy chicken, your bacon and your crotons on top of the lettuce.

Step 5
Pour your homemade caeser sauce over the top and grate some parmesan over the top, and serve! Your amazing caeser and home made crotons are ready to be served and enjoyed!

Herby lemon orzo salad!

The next recipe takes a little longer but it is worth every minute! It is also an easy, cheap on budget recipe and tastes amazing, yet again perfect for a lazy dinner or to take as a packed lunch! Here is the short list of ingredients that you need in order to make this amazing meal!

Ingredient list;
1 tbsp olive oil
1 tbsp butter
1 red onion, finely chopped
1 garlic clove, finely grated
½ tbsp light brown soft sugar
350 grams of orzo
50ml extra virgin olive oil
1 large lemon, juiced
1 small bunch of basil, finely chopped
1 small bunch parsley, finely chopped
2 tbsp capers, drained and rinsed
50 grams of flaked almonds, lightly toasted

Step 1
Heat the olive oil and butter in a non-stick frying pan over a medium heat, and fry the onion for 10 to 15 mins, or until golden and caramelised. Grate the garlic and add this and the sugar in and cook it for a further 3 minutes, then taste and season.

Step 2
Cook the orzo following pack instructions. Drain, then toss with a little of the extra virgin olive oil and leave to cool completely. Drain it then toss in a little bit of olive oil then leave it to cool down completely. With the remaining oil, add it into a large glass bowl with the lemon juice and then whisk it together, then set it to the side for now.

Step 3
Toss the cooled down onion in with your sticky onion and garlic mix, then also add in the lemon dressing herbs and capers, and to top it all off, along with half the toasted almonds. Season it with salt and pepper, then serve and enjoy!

Tuna and crunchy lentil salad!

The third and final recipe, last but certainly not least is a outstanding tuna and lentil salad recipe! This recipe only takes 15 minutes to prepare and only has 374 kcal, with a low budget ingredient list! Tasty, quick, easy, healthy, cheap, what more can you ask for!
